See the animals that are available for adoption, talk to the staff about what you're looking for, and if they don't have a match, they'll take your information so they can contact you when the animal you're looking for comes through their doors. Another benefit of adopting your animal from a shelter or rescue is that because they want to make it such a great success, they are going to make sure you are choosing the right animal for your home through its behavior evaluations.
