Thank you, thank you, thank you!!!! I love molasses cookies as do several people I know. I'd love to bake some to give as gifts and/or for the holiday cookie exchange at work. _________________

I have a recipe from my grandmother - Old fashioned molasses dunkers is what we call them. They are a molasses cut out cookie, can be soft depending on how thick you roll them out and the baking time... My dear departed mom used to make some like bricks! Dad just dunked them in his coffee to soften 'em up LOL.
I'll have to see if I can dig it up for you too... Warning: you will get arm muscles if you make them the old fashioned way by hand (no electronic processer here) . _________________

Molasses Cookies
Preheat oven to 325 degrees
Cream together (mix very well)
3/4 cup butter
2 cups brown sugar
Stir in:
2 well beaten eggs
1/2 cup molasses
2 teaspoons white vinegar
Add:
3 3/4 cups flour
1 1/2 teaspoon baking soda
2 to 3 teaspoons ground ginger
1/2 teaspoon Cinnamon
1/4 teaspoon cloves
Mix all ingredients until blended. Form dough into 3/4 inch balls, flatten a little. Bake on GREASED cookie sheet (or use parchment paper, not wax paper) for 12 minutes. Cookies will continue to cook while they cool, do not remove from cookie sheet until they have cooled slightly.
to add a marshmallow: set timer for 9 minutes, take cookies out of oven and place a marshmallow, cut in half on the cookies. Put them back in the oven for the remaining 3 or 4 minutes. |

I tried it-- but I used regular chocolate (I see no point in white chocolate )
I crunched the canes with my rolling pin-- it worked.
This weekend I'm gonna make Biscotti, I'll let you know how that works out. _________________

HR your Molasses cookie recipe sounds good!
Very similar ingredients to what ours is. The difference I see is cloves, milk, nutmeg, the rolling out vs. making balls and marshmallows.
I might have to try them. Thanks for posting the recipe... when I have more time I'll post mine.  _________________

I make a fondu dessert for my Christmas Eve family party. Its fairly simple, melted dark chocolate in a fondu pot surrounded by fruit, sugar cookies, pretzels, candy canes and biscotti. It goes over great at the party.
I am not sure I like any of your suggestions, could you perhaps mail me a sample? I would drive to your home to try them out but once I finish Kristina's I will be in no position to drive. |

Hello all---Sorry it's taken me so long to respond, I've been busy baking and putting up the Christmas Tree (and continually chasing the cat's out of both). It sure seems like Christmas really snuck up on me this year...I feel very behind.
Connie--The church windows sound like they would make and easy and colorful addition to a cookie tray. Do you know if they need to stay refridgerated or frozen until served? I usually make the trays up a few days in advance of all the mixed cookies to take with to various parties and deliver to neighbors.
Elliesmom--Sine you don't share the Truffles recipe, you must mail us each a sample Are the Peanut Butter Balls like Buckeyes?? I made Buckeyes already for the first time and they are quite yummy though I'm sure really high in calories!
Kristina--your recipes will be put to good use while making cookies this weekend!
Oscarmom--Peppermint bark is added to my list--I went out and picked up white chocolate today to make it! Thank yoU!
Krista---Peppermint Cheesecake sounds delicious!! I love cheescake! However, if I make it, I will keep it all to myself--no sharing
HR--I'm going to try your molasses cookie recipe. I don't think I've every had a molasses cookie before, but they sound yummy and seem to be gettin rave reviews from quite a few of you. Thank you for the recipe!

I believe I left them in a container on the counter. As long as it isn't warm enough too melt the chocolate (like 80 or higher), you should be fine. _________________

Kitty litter cake
1 pk Spice cake mix
1 pk White cake mix
1 pk White sandwich cookies
1 sm Package instant vanilla pudding mix
12 sm Tootsie Rolls
Prepare cake mixes and bake according to directions. Prepare pudding mix and chill until ready to assemble. Crumble white sandwich cookies in small batches in blender. They tend to stick, so scrape often.
When cakes are cooled, crumble into a large bowl. Toss with half the cookie crumbs and the chilled pudding. Gently combine. Pour into a clean kitty litter box.
Put unwrapped Tootsie Rolls in a microwave safe dish two at a time and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat until you have nine, and bury them in the mixture. Sprinkle the other half of cookie crumbs over top. Heat three more Tootsie Rolls in the microwave until almost melted. Scrape them on top of the cake and sprinkle with cookie crumbs. Serve with a new pooper scooper.

I have made that recipe before and it definately gets plenty of comments. However, I have trouble bringing myself to eat it sometimes--not because it doesn't taste good, but visually--yuck! |

And yes the recipe is Buckeyes-- I just don’t call them that.. Peanut butter balls is more descriptive. _________________
