Sweet and Sour Cabbage Soup

(I have left the beef out of this soup and it is still delicious. It is even better the second day!)

1 T. oil
1 lb. beef cut in 1 inch cubes
1 pkg. or 1 lb. shredded cabbage or cole slaw
1 onion, chopped
1 28 oz. can tomato puree
2 14 oz. cans beef broth (or vegetable)
1 c. water
1/2 c. light brown sugar, packed
1 T. lemon juice
1 tsp. salt
1/3 c. rice (optional)

Heat oil over medium heat, brown beef for 6 minutes. Add cabbage and onion. Cook, covered for 4 minutes, stirring after the first 2. The cabbage will wilt. Add puree, broth, water, brown sugar, lemon juice and salt. Bring to a boil, add rice. Reduce to medium-low heat. Simmer covered for 1 hour.

I made potato soup last night. It was yummy. Had a little for breakfast and more for lunch. Even the kids like it.

I make a beefy vegetable soup that is yummy. And not complicated.

I also love Corned beef and cabbage soup, and Chicken Pot Pie crockpot soup. I dont make either of those too often, though, hubby dosent like them.

My husband isn't too fond of potato soup but the way I figure it is, after cooking what he likes for almost every meal for 18 years, I deserve something I like every once in a while. It's a trade off, he gets pizza at least once a week for ever and I get potato soup, or vegetable soup, or beef stew (catch a theme here? Hint: veggies Laughing )once every couple of years.

i make a really good creamy tomato basil soup,that is especially wonderful in summer with fresh homegrown tomatoes and basil!

I have a fantastic cheesy potato soup recipe!

Sometimes I replace the the ham with bacon. I fix it often with smoked sausage or kielbasa.

Chop ham (use amount of meat you like in your soup)
3-5 lbs chopped potatoes
1 med chopped onion
1 lg pkg Velveeta cheese
2 cans cream of celery soup
16 oz sour cream

Boil potatoes and onion in soup pot with enough water to cover pus an inch. Do NOT drain the water.
Add the meat of choice, sour cream, Velveeta and soup. Salt and pepper to taste.

Simmer - do not boil.

mm I love making soup!

I have a great recipe for a curried carrot soup that it to die for. And Green soup with ginger is a new feel good favorite!

Oh and I make a kickbutt cream of mushroom soup - I umm borrowed the recipe from a very well known restuarant where I knew a waiter hahaha I've had it in my soup arsenal for about 8 years now.

Koro - the best poato soup comes from leftover mashed potatoes! I make it at work all the time, add milk and whatever else you like - scallions, bacon, cheese, beer, ham whatever - it;s pretty much already seasoned perfectly since they were yummy mashed potatoes yesterday!
